Sweet Potato Turmeric Fried Rice



This colorful and tasty fried rice has the earthy sweetness of sweet potatoes and the warm, fragrant spice of turmeric. This vegan dish is healthy and filling, and it's great for any meal.

Ingredients:

  • 2 cups cooked brown rice
  • 1 medium sweet potato, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground turmeric
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Green onions for garnish

Instructions:

Put sesame oil in a large pan and heat it over medium-low heat

For about 5 minutes, or until the sweet potato is just barely soft, add the diced sweet potato

Dice the onion, mince the garlic, and grate the ginger

Cook until the onion is clear

Add the ground turmeric and cook for one more minute

Soy sauce and cooked brown rice should be added to the pan

Mix things together well

After you add the frozen peas, keep cooking until everything is hot

Add pepper and salt to taste

Before serving, sprinkle with chopped green onions
