Fancy Sweet Potato Salad with Bacon



This Fancy Sweet Potato Salad with Bacon is a great mix of sweet and savory flavors that will wow anyone at any event.

Ingredients:

  • 3 medium sweet potatoes, peeled and diced
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup diced red onion
  • 1/2 cup chopped parsley
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions:

It will take about 10 minutes of boiling the diced sweet potatoes until they are soft enough to pierce with a fork

Take the sweet potatoes out of the water and let them cool down a bit

Put the cooked sweet potatoes, bacon bits, red onion chunks, and parsley leaves in a large bowl

Mix the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper in a small bowl with a whisk

Add the dressing to the sweet potato mix and gently toss to coat

Put the salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix

Enjoy! Serve cold
