Crispy Tofu Fajitas



A delicious and satisfying vegan twist on traditional fajitas, featuring crispy tofu seasoned with spices and served with sautéed bell peppers and onions.

Ingredients:

  • 1 block tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt to taste
  • 4-6 small flour tortillas
  • Optional toppings: avocado, salsa, sour cream, cilantro

Instructions:

Preheat the oven to 400F 200C

In a bowl, toss the cubed tofu with cornstarch until evenly coated

Place the coated tofu on a baking sheet lined with parchment paper, drizzle with olive oil, and bake for 25-30 minutes, flipping halfway through, until crispy and golden brown

In a separate pan, saut the sliced bell pepper and onion until tender

Add chili powder, cumin, paprika, and salt to the vegetables, stirring to combine

Once the tofu is crispy, remove it from the oven and add it to the pan with the sauted vegetables

Mix well to combine

Warm the flour tortillas in a dry skillet or microwave

Serve the crispy tofu and vegetable mixture on warm tortillas, and top with optional toppings as desired
