BBQ Chicken Pasta



This BBQ Chicken Pasta is a delightful fusion of smoky BBQ flavors with tender chicken, crisp vegetables, and cheesy goodness, all tossed together with perfectly cooked penne pasta.

Ingredients:

  • 8 oz penne pasta
  • 1 lb chicken breast, diced
  • 1 cup BBQ sauce
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

Cook the penne pasta according to package instructions until al dente

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add diced chicken breast and cook until browned and cooked through

Add diced red onion and bell peppers to the skillet

Saut until vegetables are tender

Pour BBQ sauce into the skillet and stir to combine with the chicken and vegetables

Let it simmer for a few minutes until heated through

Add the cooked penne pasta to the skillet and toss until it is evenly coated with the BBQ sauce mixture

Sprinkle shredded mozzarella cheese over the top and cover the skillet with a lid

Let it cook for a few minutes until the cheese is melted and bubbly

Garnish with chopped fresh cilantro before serving

Season with salt and pepper to taste
