Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/4 cup chocolate chips
- 1/4 cup white chocolate chips
- 1/2 cup chocolate pudding
- 1/4 cup confectioners' sugar for dusting
- Rainbow sprinkles optional
Instructions:
Warm up the oven to 350F 175C and put paper liners in a cupcake pan
Mix the cocoa powder, baking powder, baking soda, and salt in a medium-sized bowl with a whisk
Put away
Put the softened butter and granulated sugar in a large bowl and mix them together until they are light and fluffy
Add the eggs one at a time, making sure each one is fully mixed in before adding the vanilla extract
Mix the dry ingredients in slowly, adding buttermilk in between each addition
Start with the dry ingredients and end with the buttermilk
Don't mix any further than that
Put the same amount of batter into each bowl
Add the chocolate chips to one bowl and the white chocolate chips to the other
Put one tablespoon of the chocolate chip batter into each cupcake liner
Then put another tablespoon of the white chocolate chip batter into each liner
Switch between the liners until each one is about two thirds full
To make the batter look like marble, swirl it together with a toothpick or skewer
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down
Once the cupcakes are cool enough to touch, put chocolate pudding in each one using a piping bag or a small knife
Sprinkle confectioners' sugar on top of the cupcakes, and if you want, you can decorate them with rainbow sprinkles
Serve and have fun!
