Flourless Chocolate Muffins - Civilized Caveman



This blog, Civilized Caveman, served as the inspiration for these delicious Paleo chocolate muffins made without flour. They are made with healthy ingredients like bananas, almond butter, and cocoa powder instead of flour or refined sugar.

Ingredients:

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup creamy almond butter
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Optional: Enjoy Life chocolate chips for topping

Instructions:

Preheat the oven to 350F 175C and line a muffin tin with paper liners

In a large mixing bowl, combine mashed bananas, eggs, almond butter, cocoa powder, vanilla extract, baking soda, and salt

Mix well until smooth

Divide the batter evenly among the muffin cups, filling each about 3/4 full

If desired, sprinkle chocolate chips on top of each muffin

Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean

Remove from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely

Serve and enjoy!
