No-Bake Rigatoni Pasta with Italian Sausage



This no-bake rigatoni pasta with Italian sausage is a hearty and flavorful dish that comes together quickly and easily. Perfect for a cozy weeknight dinner, it's loaded with savory sausage, tangy tomatoes, and gooey melted cheese.

Ingredients:

  • 1 lb rigatoni pasta
  • 1 lb Italian sausage, casings removed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can 28 oz crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish optional

Instructions:

Cook the rigatoni pasta according to package instructions until al dente

Drain and set aside

In a large skillet, cook the Italian sausage over medium heat, breaking it apart with a spoon, until browned and cooked through

Add the chopped onion and minced garlic to the skillet with the sausage and cook until softened, about 5 minutes

Stir in the crushed tomatoes, chicken broth, dried oregano, dried basil, red pepper flakes, salt, and pepper

Bring to a simmer and cook for 10 minutes, stirring occasionally

Add the cooked rigatoni pasta to the skillet with the sausage and sauce

Toss to coat the pasta evenly in the sauce

Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the pasta

Cover the skillet and let the cheeses melt for 5 minutes

Garnish with fresh basil leaves if desired, then serve hot
